Mighty Minestrone

  1. Soak beans overnight in enough water to cover; drain.
  2. Add stock, garlic and onion.
  3. Simmer 1 1/2 hours.
  4. Add carrots and zucchini; simmer 30 minutes longer.
  5. Add tomatoes and macaroni; simmer 10 minutes more.
  6. Serve in bowls or mugs.
  7. Sprinkle with 1 teaspoon cheese.
