Pan-Fish With Green Onions And Mushrooms
- fish fillets or whole fish
- 1/4 c. cornmeal
- 1/4 c. flour
- salt and pepper
- 6 Tbsp. butter or margarine
- 3/4 lb. mushrooms, sliced
- 1 Tbsp. crushed capers
- 6 green onions, sliced
- 2 cloves garlic, sliced
- 1/4 c. bread crumbs
- 1/2 tsp. tarragon
- 2 Tbsp. chopped chives
- Dredge the fish in a mixture of cornmeal, salt and pepper.
- Fry fish in 2 tablespoons butter until browned on each side.
- Transfer to a dish.
- Saute mushrooms and capers in another skillet in 2 tablespoons butter or margarine and remove them to a lightly buttered shallow baking dish.
- Saute the onions and garlic in butter for 1 to 2 minutes.
- Lay the fish on the bed of mushrooms, sprinkle with bread crumbs mixed with tarragon and spread the onions, garlic and chives over this.
- Bake in a preheated 400u0b0 oven for 10 to 12 minutes.
