Pan-Fish With Green Onions And Mushrooms

  1. Dredge the fish in a mixture of cornmeal, salt and pepper.
  2. Fry fish in 2 tablespoons butter until browned on each side.
  3. Transfer to a dish.
  4. Saute mushrooms and capers in another skillet in 2 tablespoons butter or margarine and remove them to a lightly buttered shallow baking dish.
  5. Saute the onions and garlic in butter for 1 to 2 minutes.
  6. Lay the fish on the bed of mushrooms, sprinkle with bread crumbs mixed with tarragon and spread the onions, garlic and chives over this.
  7. Bake in a preheated 400u0b0 oven for 10 to 12 minutes.
