Phad Thai

  1. Soak noodles 30 minutes until pliable and drain (sometimes it takes longer).
  2. Mix sauce (sugar, vinegar, paprika and fish sauce).
  3. Set aside.
  4. Heat wok over high heat and stir fry meat until cooked through.
  5. Add noodles.
  6. Add garlic and sauce.
  7. Tuck eggs under noodles and add oil as needed.
  8. Add sprouts and garnish with green onions, peanuts and lime wedges.
