Curly Casserole With Tuna
- 8 ounces cellentani pasta cooked
- 1 head broccoli cut and cooked
- 2 carrots sliced and cooked
- 8 tablespoons mayonnaise split 6/2
- 1 onion small, diced
- 3 cloves garlic diced
- 2 tablespoons flour
- 3 cans tuna drained, 5oz
- 2 cups chicken broth
- salt
- 3/4 cup Parmesan cheese
- 1/2 package buttery crackers or less of
- Heat pan with 6 Tbsp mayo and add onions. Cook until tender, stirring occasionally, about 5 minutes.
- Add garlic and flour; Cook for a few more minutes, stirring often.
- Stir in tuna until incorporated and cook until heated thoroughly.
- Pour in broth, stir well, and bring to a boil. Lower heat and simmer for about 5 minutes or until thicker, season with salt & pepper.
- In separate bowl, crush crackers and stir in 2 Tbsp of mayo until well incorporated.
- Stir vegetables, 1/2-3/4 c cheese and pasta into the tuna, heat thoroughly.
- Pour into 2 qt casserole dish and cover with 1/4 c cheese and cracker mix. Bake at 350 F for 15-20 minutes or until crackers are browning and casserole is bubbly. Yum!
