Pumpkin Ginger Bread
- 1 1/4 cups cane sugar
- 1/2 cup grapeseed oil
- 2 eggs
- 1/3 cup water
- 1 cup pumpkin puree
- 1 teaspoon ground ginger
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground clove
- 1/2 teaspoon ground allspice
- 3/4 teaspoon ground cinnamon
- 1 3/4 cups all purpose flour
- 3/4 teaspoon salt
- 1 teaspoon baking soda
- 1/4 teaspoon baking powder
- -Preheat oven to 350F.
- -Prepare a 9x13 inch loaf pan by spraying it with cooking spray.
- -In the bowl of an electric mixer, fitted with the whisk attachment, combine all the ingredients and mix on medium speed until well combined.
- -Pour the batter into the loaf pan.
- -Bake for about 1 hour or until a toothpick, inserted into the center of the loaf comes out clean.
- -Transfer to a wire rack to cool before slicing.
