Milk Rolls
- 3 2/3 cups bread flour
- 2 eggs
- 3 1/4 tablespoons sugar
- 1 3/16 tablespoons honey
- 3 1/2 tablespoons butter melted
- 2/3 tablespoon salt
- 3 1/8 tablespoons powdered milk
- 1 cup milk fresh
- 2 1/16 tablespoons dry active yeast
- Preheat the oven to 250 degrees Celsius and place a pan of water on the bottom.
- In a large bowl, mix together the flour, egg, sugar, honey, melted butter, salt, and powdered milk. Slowly, add the fresh milk.
- Knead about 15 minutes but a few minutes before finishing, add the active yeast. The dough should end up firm and smooth.
- Make 80 gram balls and let sit under a moist towel 30 minutes in a warm place.
- After the 30 minutes, form the balls into ovals, and let rest another 90 minutes in a warm place until doubled in volume.
- Baste the rolls with beaten egg.
- Once the oven fully heated, lower the heat to 230 C, and bake the rolls 12 minutes until puffed and brown.
