Pollo Con Naranja(Chicken With Orange)
- 2 (2 1/2 lb.) chickens, quartered
- 1/4 lb. butter
- 2 Tbsp. cooking oil
- 2 Tbsp. flour
- 1/2 tsp. salt
- 1/4 tsp. cinnamon
- 1/4 tsp. ground cloves
- 1 small can frozen orange juice, diluted with water to be 3 c.
- 1/2 tsp. Tabasco sauce
- 1 c. white, seedless raisins
- 1 c. slivered almonds
- 2 oranges, sectioned or 1 can mandarin orange sections
- Advance Preparation:
- Brown chicken in hot butter or oil in skillet.
- Remove chicken.
- Add flour, salt and spices to skillet, stirring to form a paste.
- Add orange
- juice and Tabasco sauce. Stir constantly until mixture thickens and comes to a boil.
- Add chicken, raisins and almonds.
- Cover tightly.
- (May be refrigerated overnight.)
