High Fiber Muffins
- 2 cups all-purpose flour unsifted
- 1 cup sugar
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 1/2 cups quick-cooking rolled oats uncooked
- 1 cup whole bran cereal bran or wheat germ
- 1/2 cup raisins
- 2 eggs
- 1 cup buttermilk
- 1/2 cup light molasses
- Preheat oven to 350 degrees.
- In a mixing bowl, combine the flour, sugar, salt, and baking soda.
- Stir in the oats, bran cereal, and raisins.
- Combine the eggs, buttermilk, and molasses.
- Add to the dry ingredients and stir until the dry ingredients are moistened.
- Spoon the batter into greased 2 inch muffin cups, filling each cup 2/3 full.
- Bake for 15 to 20 minutes or until toothpick inserted into a muffin comes out clean.
- Makes approximately 12 muffins.
