Pancit Canton Noodles – Pork And Veggies Stir Fry
- 1 (8 oz.) pack. / 227 g. Pancit Canton noodles
- 16 oz. / 450 g pork tenderloin
- 2 tbsp. corn starch
- 1 tsp ginger powder
- 2 tbsp. soy sauce
- 3 tablespoon sesame oil
- 2 tbsp. white wine
- 1 red bell pepper, julienned
- 5 or 6 Paris mushrooms, stemmed and minced
- 8 oz. (227 g.) bean sprouts
- 2 cloves garlic, minced
- 1/2 cup of hot chicken stock
- 2 tbsp. white wine
- 4 tbsp. soy sauce
- 1 tbsp. fish sauce
- 1 tsp ginger powder
- 1 tsp sugar
- 2 tbsp. Sweet Chili Sauce or more to taste
- 4 basil leaves
- Salt and pepper to taste
- 1 egg yolk
- Salt to taste
- Prepare the pork tenderloin:nnto a large bowl or plastic container, add the cornstarch, ginger powder, soy sauce, sesame oil and white wine, stir wellnnSlice the tenderloin, then cut it in strips and add them to the marinade, stir well and marinate for at least 15 minutes, stir from time to timennInto a large saucepan or wok, heat some vegetable oil on medium/high heat and stir fry the pork on all sides until goldennnRemove from the pan and set aside
- Make the omelet:nrush a small pan with some vegetable oil, heat it up, turn off the heat and remove pan from heat, add the fork whisked egg yolk and let it cooknnRoll up the omelet and cut it in strips, set aside
- Sauteed the vegetables:nnto the same pan, heat some vegetable oil, add the garlic, red pepper, mushrooms, stir-fry for about 5 minutes until the vegetables start to wiltnnAdd the bean sproutsnnAdd the hot stock, stir and pour onto the vegetables, together with the wine and all the spices, toss and give it a boil, then lower the heat and simmer on medium/low heat for about 10 minutes or until the vegetables are tendernnTaste and adjust seasoningnnSet aside
- Pancit Noodles:nhilst the vegetables are cooking, cook the pancit noodles as per instructions on the package and set aside. In general, cooking time is 1 minute, what I do is I boil water, pour it in a large bowl, add my noodles, cover and stir them from time to time until they're cooked (That's one pan less on the stove to take care of)nnDrain well, set aside
- Assembly:nnto the same large pan or wok, heat 2 tablespoons vegetable oil and 1 tablespoon sesame oil, add the noodles, vegetables and pork, stir and sauteed quickly to re-heat all ingredientsnnAdjust seasoningnnAdd the omelet strips, stir, it's ready!nnEnjoy!
