Potato Spinach Casserole
- 6 medium potatoes
- 2 vegetable bouillon cubes
- 1/2 cup plain yogurt
- 3 tablespoons margarine or butter
- 1/4 teaspoon paprika
- 2 all purpose seasoning
- 1 cup grated cheese
- 1 finely chopped onion
- 1 teaspoon minced garlic
- 2 peppers seasoning
- 10 ounces fresh spinach chopped
- 1 teaspoon curry
- 2 eggs
- Preheat oven to 425F
- Peel and chop potatoes and place in a saucepan with bouillon cube. Cook till tender.
- Drain and mash potatoes. Add yogurt, 2 tbsp margarine, paprika, All purpose seasoning, curry and mix well.
- Add eggs with electric beater on low for 1 minute. Fold in cheese.
- In non-stick skillet, melt 1 tsp margarine and saute onion, garlic and Seasoning peppers. Add spinach and cook until tender.
- Spread half of the potato mixture into buttered 2 quart baking dish. Layer with spinach then potato. Sprinkle with remaining cheese and paprika.
- Bake uncovered for 15 minutes or until top is golden brown.
