Scampi Natua Flambe
- 16 medium shrimp
- finely chopped garlic
- finely chopped shallots
- finely chopped parsley
- finely chopped tomato
- paprika
- salt and pepper
- Hollandaise Sauce
- olive oil
- 1 c. heavy cream
- juice of 1/2 large lemon
- brandy
- 1/4 c. white wine
- Preheat pan with olive oil over high flame.
- Add small amount of garlic; stir once.
- Add shrimp and dash of salt and fresh ground pepper.
- Sear on both sides until just white all the way through.
- Remove to plate; drain on paper towel.
- Add garlic, shallots, parsley and tomato.
- Add 1 circle (3/4 ounce) brandy; flame and stir.
- Slowly add white wine until flame is out.
- Add 1 cup heavy cream, juice of 1/2 large lemon and bring to simmer. Reduce flame.
- Add Hollandaise and scampi (important:
- no water). Cook off.
- Pour over fettucini.
- Finish with paprika.
