Healthy No-Cook Asian Chicken Lettuce Cups
- 1 clove garlic
- 1/4 inch fresh ginger peeled
- 2 tablespoons tamari or soy sauce
- 1 tablespoon honey
- 1 tablespoon rice vinegar
- 1 large carrot
- 1 red bell pepper
- 4 ounces water chestnuts 1 can, drained
- 2 scallions
- 12 ounces Tyson(R) Grilled & Ready(R) Chicken Breast Strips can also use Tyson(R) Grilled & Ready(R) Chicken Breast Fillets or Tyson(R) Grilled & Ready(R) Oven Roasted Diced Chicken Breast
- 8 leaves iceberg lettuce or butter lettuce, large; use a few more if leaves are smaller
- 1 tablespoon toasted sesame seeds
- Peel garlic. Finely grate garlic and ginger into a large bowl. Add tamari, honey, and rice vinegar and whisk to combine.
- To make the lettuce cups gluten-free, buy a brand of gluten-free tamari.
- Coarsely shred carrot. Finely dice red pepper and water chestnuts, and mince scallions.
- Arrange chicken in a single layer in a glass pie pan. Microwave chicken according to package directions, then chop into bite-size pieces.
- Add vegetables and chicken to bowl with tamari dressing and toss to thoroughly coat.
- Divide chicken and vegetables evenly among lettuce leaves. Sprinkle sesame seeds on top, and serve immediately.
