Healthy No-Cook Asian Chicken Lettuce Cups

  1. Peel garlic. Finely grate garlic and ginger into a large bowl. Add tamari, honey, and rice vinegar and whisk to combine.
  2. To make the lettuce cups gluten-free, buy a brand of gluten-free tamari.
  3. Coarsely shred carrot. Finely dice red pepper and water chestnuts, and mince scallions.
  4. Arrange chicken in a single layer in a glass pie pan. Microwave chicken according to package directions, then chop into bite-size pieces.
  5. Add vegetables and chicken to bowl with tamari dressing and toss to thoroughly coat.
  6. Divide chicken and vegetables evenly among lettuce leaves. Sprinkle sesame seeds on top, and serve immediately.
