Mini Whole Wheat Chocolate Chip Pancake Bites
- 2 tablespoons Greek yoghurt nonfat plain
- 2 tablespoons unsweetened applesauce
- 4 tablespoons turbinado sugar plus extra for topping
- 2 eggs
- 2 teaspoons vanilla
- 1/2 cup all-purpose flour plus 1 tbsp separated
- 1/2 cup whole wheat flour
- 2 teaspoons baking powder
- 1/2 cup nonfat milk
- 1/4 cup semi sweet chocolate chips
- Preheat oven to 325 degrees. Grease and place empty cupcake (12) tin inside to heat along with oven.
- Using electric mixer, mix yoghurt, applesauce, and sugar. Add eggs and vanilla, mix thoroughly.
- Slowly add all-purpose flower, whole wheat flour, and baking powder to mixture. Mix well, scrape down sides.
- Mix in milk.
- In Ziploc bag, mix chocolate chips and remaining tablespoon of flour. Slowly stir into batter.
- Remove pans from oven, equally divide batter, top with a little turbinado sugar, bake for 12-15 minutes or until they are slightly golden and an inserted toothpick comes out clean.
- Enjoy warm with a light dusting powdered sugar.
