Mini Whole Wheat Chocolate Chip Pancake Bites

  1. Preheat oven to 325 degrees. Grease and place empty cupcake (12) tin inside to heat along with oven.
  2. Using electric mixer, mix yoghurt, applesauce, and sugar. Add eggs and vanilla, mix thoroughly.
  3. Slowly add all-purpose flower, whole wheat flour, and baking powder to mixture. Mix well, scrape down sides.
  4. Mix in milk.
  5. In Ziploc bag, mix chocolate chips and remaining tablespoon of flour. Slowly stir into batter.
  6. Remove pans from oven, equally divide batter, top with a little turbinado sugar, bake for 12-15 minutes or until they are slightly golden and an inserted toothpick comes out clean.
  7. Enjoy warm with a light dusting powdered sugar.
