Perfect Lentil And Pumpkin Dahl
- 1 x 375g bag red lentils
- 1 tsp - turmeric powder
- 1/4 of a pumkin (chopped)
- 1 tsp - ground cumin
- 1 tsp - ground chilli
- 1 tsp - ground ginger
- 1 tsp - yellow mustard seeds
- 2 tsp - ground coriander
- 1 large onion (chopped fine)
- 1 cup red shallots (chopped fine)
- 2 sprigs of fresh curry leaves
- 2 large tomatos
- salt
- fresh coriander
- basmati rice or naan / roti (optional)
- Boil the lentils, pumpkin and turmeric in a large pot with a generous amount of water.
- Fry curry leaves, onions and shallots on a medium heat, in butter or ghee until onions have caramelised. Add spices and fry for a couple more minutes.
- Add to the spice mix and chopped tomatoes to the pot and simmer for 30 minutes (min). Add salt to taste.
- Serve with fresh coriander
