Harold'S Favorite Oatmeal Cookies
- 1 c. butter or margarine, softened
- 1 egg
- 1 tsp. vanilla
- 1/2 tsp. baking soda
- 1/2 tsp. cinnamon
- 3 c. quick-cooking oats, uncooked
- 1 c. raisins
- 1 c. shredded coconut
- 1 1/2 c. sugar
- 1/4 c. water
- 1 1/2 c. flour
- 1/2 tsp. salt
- 1/2 tsp. nutmeg
- 1 c. chopped nuts
- 6 oz. pkg. semi-sweet chocolate chips
- Cream butter.
- Gradually add sugar, beating at medium speed until light and fluffy.
- Add egg and beat well.
- Add water and vanilla, mixing well.
- Combine flour, soda, salt, cinnamon and nutmeg; add to creamed mixture and mix.
- Stir in oats, nuts, raisins, chocolate chips and coconut.
- Dough may be divided and various combinations of nuts, raisins, chips added.
- Drop dough by rounded teaspoonfuls onto ungreased cookie sheets.
- Bake at 350u0b0 for 10 to 12 minutes or until lightly browned.
- Yield: about 8 dozen.
