Couscous And Carrot Patties With Sesame Salad
- 1/2 pound couscous
- 1/4 pound carrots peeled and finely grated
- 1/2 pound ricotta cheese
- 1 egg beaten
- 2 teaspoons curry powder
- 7 tablespoons canola oil
- 3 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1/2 bunch cilantro leaves fresh, chopped
- 2 chilies deseeded and cut into thin strips
- 1 red onion peeled and sliced
- 2 cucumbers thinly sliced
- Prepare couscous according to package instructions then let cool. Once cool, combine with carrot, ricotta, egg and curry powder and season. Divide into 16 patties. Heat oil in a nonstick frying pan and fry patties, turning, until golden brown, working in batches if necessary.
- Meanwhile, mix vinegar with sesame oil and 1-2 tbsp canola oil and season. Toss with cilantro, chili, onion and cucumber. Serve patties on a plate with salad on the side.
