Smoked Sausage And Potato Skillet
- 1 package Hillshire Farm(R) Beef Smoked Sausage
- 5/8 pound mini golden potatoes
- 8 ounces whole baby carrots
- 1 red bell pepper thinly sliced
- 1/4 cup green peas
- 1 tablespoon unsalted butter
- 1 teaspoon freshly chopped thyme
- 1 teaspoon freshly chopped parsley
- kosher salt
- Boil water in a large pot. Cook the potatoes for 15 minutes, remove and slice in half; set aside. In the same boiling water, cook the carrots for 5 minutes and drain. Heat a large skillet over medium-high. Heat skillet over medium-high heat and cook sausage 2 minutes, add the potatoes, carrots, peppers and peas. Continue to cook for 10 minutes and finish with butter. Season with the fresh herbs, salt and pepper.
