Pecan Puffs

  1. Heat oven to 300u0b0.
  2. Have ungreased cookie sheets ready. Process flour and pecans in a food processor or blender until nuts are very finely chopped.
  3. Beat butter, sugar and vanilla in a large bowl with electric mixer until pale and fluffy.
  4. With mixer on low speed, gradually beat in flour mixture just until blended. Roll level tablespoonfuls dough into balls.
  5. Place 1 inch apart on cookie sheets.
  6. Bake 45 minutes or until golden.
  7. While warm, roll in confectioners sugar.
  8. Place on wire rack to cool completely, then roll in confectioners sugar again.
  9. Store airtight up to 2 weeks or freeze.
