Pecan Puffs
- 1 c. all-purpose flour
- 1 c. pecans
- 1 stick (1/2 c.) butter or margarine, at room temperature
- 2 Tbsp. granulated sugar
- 1 tsp. vanilla
- confectioners sugar (for decoration)
- Heat oven to 300u0b0.
- Have ungreased cookie sheets ready. Process flour and pecans in a food processor or blender until nuts are very finely chopped.
- Beat butter, sugar and vanilla in a large bowl with electric mixer until pale and fluffy.
- With mixer on low speed, gradually beat in flour mixture just until blended. Roll level tablespoonfuls dough into balls.
- Place 1 inch apart on cookie sheets.
- Bake 45 minutes or until golden.
- While warm, roll in confectioners sugar.
- Place on wire rack to cool completely, then roll in confectioners sugar again.
- Store airtight up to 2 weeks or freeze.
