Waffle Burgers
- 4 ounces softened butter or margarine
- 4 eggs
- 5 tablespoons 1% milk
- 1 bunch chives finely chopped
- 2 cups all purpose flour sifted
- 2 teaspoons baking powder
- 1 teaspoon dijon mustard
- 1 tablespoon breadcrumbs
- 1 pound ground beef
- 1 tablespoon olive oil
- 1 cucumber small, sliced
- 2 tomatoes sliced
- 1 lettuce torn
- 4 tablespoons salad dressing
- For the waffle buns, preheat oiled waffle iron. Whip butter in a mixing bowl, then stir in eggs one at a time. Add milk gradually, then chives. Stir in sifted flour and baking powder and beat until batter is smooth. Season. Pour 3-4 tbsp batter onto waffle iron and heat until golden brown. Make 8 waffles in total.
- Mix the mustard and breadcrumbs into the beef and season. Make 4 patties 3 inches wide. Heat oil in a frying pan and fry patties for 3 mins on each side.
- Toss salad ingredients in dressing. On each plate, cover a waffle with salad and meat patty and top with another waffle.
