Tropical Fruit Cakes
- 1 cup all purpose flour + 2 tbsp
- 1/2 cup self rising flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1 cup brown sugar
- 1/2 cup desiccated coconut
- 15 ounces crushed pineapple drained
- 2 bananas mashed
- 2 eggs beaten lightly
- 3/4 cup vegetable oil
- icing Lemon
- 1 cup powdered sugar sifted
- 1 tablespoon butter melted
- 1/2 tablespoon lemon juice
- 1/2 cup walnut halves toasted, to decorate
- Preheat oven to 350u0b0F. Grease and line 3 foil loaf pans with parchment paper.
- Sift together flour, baking soda, spices and sugar. Mix in coconut, pineapple, banana, eggs and oil until combined. Distribute between prepared pans and bake for around 45 mins, until a skewer inserted in the center comes out clean. Let cool in pans on a wire rack.
- Meanwhile, to make the lemon icing, combine all ingredients. Heat over a double boiler until fluid and pourable.
- Drizzle lemon icing over cooled cakes and decorate with walnut halves.
