Chicken & Yellow Rice Casserole

  1. Sprinkle chicken breast with garlic, salt and pepper.
  2. Then place in slightly greased frying pan and brown lightly (don't fry done).
  3. Place chicken in large casserole dish and set aside.
  4. IN pan where chicken was browned combine onion, bell peppers and saute until tender then add your broth and large can of stewed tomatoes, bay leaves and salt & pepper to taste.
  5. Pour mixture over your chicken and sprinkle packages of rice evenly into the liquid.
  6. Bake at 400 degrees about an hour or until chicken and rice appear to be done.
  7. You may wish to add some water if not enough liquid to cook your rice properly.
