One-Pot Cajun Dirty Rice Casserole

• 1 stalk celery large
• 8 scallions
• 1 green bell pepper
• 2 tomatoes medium
• 2 garlic cloves large
• 16 ounces Jimmy Dean(R) Premium Pork Regular Sausage
• 1 tablespoon paprika
• 1 teaspoon dried thyme
• 1/2 teaspoon dried oregano
• 1/2 teaspoon ground cumin
• 1/2 teaspoon dry mustard powder
• 1/4 teaspoon cayenne or use more or less to taste
• 1 teaspoon light brown sugar packed
• 3 cups cooked rice cold
• 14 1/2 ounces red beans 1 can, drained and rinsed
• 2 tablespoons heavy cream
• 1/2 teaspoon salt
• 1/4 teaspoon black pepper
• 1 cup shredded cheddar cheese
• 2 tablespoons fresh parsley chopped

1. Preheat the oven to 400u0b0F.
2. Finely chop celery, scallions, and bell pepper. Finely chop the tomatoes and set aside. Mince garlic and set aside.
3. Set a Dutch oven or other ovenproof pot over medium-high heat. Add sausage and cook, stirring occasionally to break up the sausage with a wooden spoon, until it begins to render some fat, about 2 minutes.
4. Reduce heat to medium. Add celery, scallions, and bell pepper. Cook until meat is browned and the vegetables are tender, about 10 minutes.
5. Add paprika, thyme, oregano, cumin, dry mustard, cayenne, brown sugar, and minced garlic to pot. Cook, stirring, for 30 seconds. Stir in rice, breaking up any clumps. Add red beans, tomatoes, heavy cream, salt, and black pepper. Continue cooking 1-2 minutes longer, stirring to mix all the ingredients.
6. Turn off the heat. Sprinkle shredded cheese evenly over the top of the dish.
7. Bake pot on middle rack of oven until cheese is melted and lightly browned at the edges, 12-15 minutes.
8. Check to see that casserole is done. Remove from oven or add time as needed.
9. Let the casserole cool 5-10 minutes. Chop parsley, scatter over casserole, and serve.
