Sweet Potato Bread
- 2 c. unbleached or all-purpose flour
- 2 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. ground allspice
- 1/4 tsp. ground nutmeg
- 1 c. mashed, cooked sweet potatoes
- 1/2 c. firmly packed brown sugar
- 1/4 c. unsalted margarine, melted
- 3 Tbsp. skim milk
- 2 eggs
- 1 tsp. grated orange rind
- 1/4 c. chopped pecans
- vegetable cooking spray
- Combine first 5 ingredients in large bowl; set aside.
- Combine potatoes, sugar, margarine, milk, eggs, orange rind and nuts, beating well.
- Add to dry ingredients, stirring just until moistened.
- Pour batter into a 9 x 5 x 3-inch loaf pan coated with cooking spray.
- Bake at 350u0b0 for 45 minutes or until a wooden pick inserted in center comes out clean.
- Cool in pan for 10 minutes; remove from pan and cool completely.
- Yield: 1 loaf or 18 (1/2-inch) slices.
