Tuna Surprise
- 1 can tuna
- 1 c. cooked rice
- 1/2 onion, chopped
- 2 tsp. minced parsley
- 2 tsp. margarine
- 2 Tbsp. flour
- 1/2 c. milk
- 1/2 tsp. salt
- dash of pepper
- 1/2 tsp. mustard
- 1/2 tsp. lemon juice
- 1 tsp. celery salt
- 2 Tbsp. water
- 1 egg
- bread or corn flake crumbs
- Melt margarine in small saucepan.
- Add flour and mix until smooth.
- Add milk; cook, stirring constantly until sauce thickens. Add salt, pepper, mustard and lemon juice.
- Combine sauce with tuna, chopped onion, parsley, celery salt and cooked rice.
- Mix well and shape into balls.
- Beat egg slightly and add water.
- Roll croquettes in crumbs then egg mixture, then again in crumbs.
- Fry until golden brown (about 3 minutes).
