Chicken And Sausage Salad With Beans
- 2 boneless skinless chicken breasts medium
- 100 grams turkey sausage sliced
- 10 leaves spinach
- 2 cups lettuce cut into bite-sized pieces
- 2 tomatoes diced
- 1/4 red onion cut into thin half moons
- 5 sprigs cilantro
- beans Prepared
- 2 tablespoons olive oil
- 1 teaspoon oregano ground
- 1 lemon
- 3 cloves garlic finely minced
- 1 tablespoon soy sauce
- ground black pepper
- 1/4 cup tomato sauce prepared
- 1 lemon
- 2 tablespoons olive oil
- Combine the olive oil, oregano, lemon juice and rind, garlic, soy sauce, and pepper. Add the chicken, cover, and let marinate in the refrigerator for 30 minutes.
- Brown the sausage in a skillet and blot off the excess grease with a paper towel. Cook the chicken in the same skillet, allowing it to brown on both sides. Remove from pan, cool for 10 minutes, and then chop. Set aside.
- Mix the spinach with the lettuce, tomatoes, onion, and cilantro. Divide onto plates and place the sausage and chicken on top.
- Whisk the tomato sauce, lemon, and olive oil together. Drizzle over the chicken and serve with warmed beans on the side.
