Vietnamese Pork Meatball Baguette

  1. The day before, mix the carrots, vinegar, sugar, and salt. Cover and refrigerate overnight. Add the bell peppers the following day.
  2. Mix the meat with the rest of the ingredients. Wet your hands and make 2- to 3-centimeter meatballs.
  3. Spray cooking oil in a skillet and place over medium-high heat. Add the meatballs and cook until golden brown all over.
  4. Mix the ingredients together and set aside.
  5. Cut the bread open in half, spread the mayonnaise, add the lettuce, cilantro, meatballs, and pickled carrots. Serve with jalapeno peppers.
