Wholesome Nut & Seed Crackers
- 1 cup sunflower seeds
- 1/2 cup flaxseeds
- 1/3 cup pumpkin seeds
- 1/4 cup sesame seeds
- 1 1/2 cups rolled oats
- 2 tablespoons chia seeds
- 4 tablespoons psyllium husks
- 1 1/2 teaspoons sea salt
- 1 tablespoon maple syrup
- 3 tablespoons coconut oil melted, or ghee
- 2 tablespoons rosemary chopped
- 1/2 teaspoon garlic powder
- In a large bowl combine all dry ingredients, stirring well.
- Whisk maple syrup , oil and water together then add to the dry ingredients and mix really well so that all the dry ingredients are soaked through and the mixture becomes thick. If the dough is too thick to stir add a splash of water.
- Divide the dough in half and set one half aside.
- Gather the dough into a ball and place between two sheets of baking paper. Using a rolling pin, firmly roll out into a thin sheet.
- Remove top layer of baking paper and with the tip of a knife score the dough into triangles or squares.
- Repeat with the second ball of dough.
- Let sit on the counter for at least 2 hours.
- Preheat oven to 175 degrees celcius.
- Using the baking paper, slide the dough onto a baking tray and place into the oven for 20 minutes. Remove from oven and flip the whole cracker over, remove baking paper and place back in the oven to bake for another 10 minutes until crisp and golden.
- Let cool completely and then break the crackers where you previously scored them.
- Store in an airtight container and store for up to 3 weeks.
