Curried Chickpeas And Vegetables
- 1 cup chickpeas cooked, /garbanzo beans
- 2 potatoes cubed
- 4 cups water
- 3 cubes beef of" NOT, or NOT CHICKEN" vegan bouillons.
- 1/2 onion medium, diced
- 2 cloves garlic
- 6 ounces diced tomatoes can of, or pureed tomatoes
- 1 cup veggies
- 1 cup fresh cilantro
- 1 1/2 tablespoons ground ginger fresh
- 1 teaspoon cumin
- 2 tablespoons curry powder
- 1 teaspoon Garam Masala
- pepper
- liquid aminos
- 1 tablespoon oil preferably grape seed oil or olive oil
- Saute garlic and onions in the oil.
- After you sweat the onions, add spices (cumin, curry, and garam masala).
- Add water, bouillon cubes, ginger, garbanzo beans/chickpeas, potatoes, and veggies.
- Boil and simmer for about 25 minutes, or until all of the veggies are cooked.
- Add fresh cilantro and cook for about 10 minutes more.
