Yellow Squash With Fragrant Rice

  1. Heat a large frying pan with a drizzle of olive oil. Add the sliced onion and garlic and sliced squash, season with salt, pepper and red pepper flakes. Gently, saute until the squash is slightly golden.
  2. Cook the rice as directed adding the spices to the water used for cooking the rice.
  3. Plate the rice and top with the sauteed squash, drizzle olive oil, dash of red pepper flakes and grated Romano cheese.
