Savory Oatmeal
- 1 tablespoon butter
- 1 leek small, white parts only, halved and sliced into 1/8-1/4" half-circles, about 1/2 cup
- 1 shallot small, finely chopped, about 2 tablespoons
- 2/3 cup steel cut oats not quick cooking
- 1 2/3 cups water
- 1 pinch salt & pepper
- 1/4 cup Parmesan cheese lightly packed, freshly grated, plus more for serving
- 1 tablespoon butter
- 1/2 pound broccolini ends trimmed
- 1 clove garlic minced
- 1/2 cup water as needed
- Melt 1 tablespoon butter in a 10" skillet from the KitchenAid(R) Tri-Ply Copper 10-Piece Set over medium heat on the cooktop of the KitchenAid(R) Gas Convection Slide-In Range.
- Add the leek and shallot and cook, stirring, until it softens and begins to brown, 3-4 minutes.
- Add the oats and water and stir to combine. Bring to a boil and reduce heat to a simmer. Continue cooking, stirring occasionally, until the oats are cooked through to desired consistency, 15-20 minutes.
- Meanwhile, melt the remaining butter in the 8" skillet from the Tri-Ply Copper 10-Piece Set over medium heat on the cooktop of the Gas Convection Slide-In Range. Add the broccolini and garlic and cook until the broccolini begins to brown, 2-3 minutes. Use tongs to flip broccolini and cook for an additional 2-3 minutes until it begins to brown. Add 1-2 tablespoons of water and cover. Reduce heat to medium-low and cook for 2-3 minutes. Check for doneness with a knife. If it needs to cook longer (depending on the size of your broccolini), repeat the last step, adding water and cooking covered until done.
- Fold in the grated parmesan cheese when the oats are done cooking. Taste and add salt and pepper as desired.
- Top with cooked broccolini, shaved parmesan, and freshly ground pepper. Serve immediately.
