Mac And Cheese With Bacon
- 1 pound whole wheat pasta
- 1/4 teaspoon garlic powder
- 1 1/2 cups low-fat buttermilk
- 1/4 cup low sodium chicken broth
- 2 tablespoons whole wheat flour
- 1 1/2 cups low-fat swiss cheese cut into small cubes
- 1/4 cup Parmesan cheese shredded
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried basil
- 2 slices turkey bacon chopped
- salt to taste
- black pepper to taste
- In a large pot, boil salted water and cook pasta according to directions.
- Drain pasta in a colander or strainer.
- In a large bowl, mix the milk, broth, and flour with a whisk until the flour has dissolved.
- Pour the milk mixture, garlic powder, basil, thyme, and a pinch of salt and pepper into a medium saucepan sprayed with cooking spray.
- Cook over medium heat for 3-4 minutes or until the milk begins to thicken.
- Add the Swiss cheese and parmesan cheese. Continue to stir the sauce for about three minutes, until the cheese is melted.
- In a small pan sprayed with cooking spray, cook the turkey bacon pieces over medium heat for 3-4 minutes, until they are crispy. Set bacon aside on a plate lined with a paper towel.
- Fold the cheese sauce into the pasta. Be sure not to stir too vigorously, or you'll end up tearing the noodles.
- Top with bacon pieces and serve.
