Cake Doughnuts
- 1 vanilla pod
- 1 15/16 cups flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- ground nutmeg
- 1/2 cup superfine sugar
- 5 3/8 tablespoons milk plus more as needed
- 2 tablespoons yogurt
- 1 egg
- vegetable oil
- Open the vanilla pod and extract the seeds.
- Sift the flour and mix with the baking powder, salt, nutmeg, vanilla seeds, and sugar.
- Separately, mix the milk, yogurt, and egg.
- Mix the solids with the liquids with an electric mixer. The batter will be thick.
- While still stirring, add more milk until the batter is sticky and fluid.
- Place the batter in a pastry bag.
- Spread butter on parchment paper. Make the doughnuts and place on the parchment to handle easily.
- Heat the oil on low heat and fry the doughnuts for 1 to 2 minutes on each side.
- To serve, lightly cover with sugar.
