Very Berry Chutney
- 1 cup fresh blackberries
- 1 cup fresh strawberries
- 1 medium red onion
- 2 tablespoons chia seeds
- 1/3 cup strawberry/blackberry jam
- 2 tablespoon coconut oil
- 1/4 cup honey/syrup
- 2 tablespoon balsamic vinegar
- 2 tablespoon fresh rosemary + 1 tablespoon dried rosemary
- salt and cracked black pepper to taste
- Whole grain mustard (optional)
- 1 tablespoon henderson's relish or lea perrins
- Wash fresh berries under cold running water. Finely slice onion. Heat 2 tablespoons of coconut oil in a pot.
- Caramelize onion on medium heat. Add thyme. Stir until soft then add jam.
- Gradually add berries in batches allowing it to soften and incorporate.
- Add honey/syrup, balsamic vinegar, lea perrins and chia seeds then cover and simmer for 20 minutes
- Stir and uncover cranking up the heat to high for 2 minutes. Add salt and pepper to taste while doing this
- Leave to cool in sanitized jar before storing in fridge.
