Simple Sausage And Bell Pepper Penne
- 1/2 cup penne pasta made from brown rice or other whole grains, equal to 1 cup cooked pasta
- 3 tablespoons extra-virgin olive oil
- 180 grams sausage casings mild italian, removed
- 1 teaspoon paprika
- 1 yellow bell pepper medium
- 1 1/2 cups spinach
- 1 teaspoon salt or to taste
- 1 teaspoon pepper or to taste
- 100 grams monterey jack cheese shredded
- 4 leaves fresh basil
- hot sauce optional
- In a pot of boiling salted water, boil penne as directed on package, or until al dente. Drain and set aside.
- In a large frying pan on medium heat, break up sausage pieces using a spatula. Cook the ground sausage until no longer pink, around 3-4 minutes.
- Add diced peppers, spinach and paprika, sauteing until peppers are tender and spinach is wilted (2-3 minutes).
- Add in cooked penne, salt, pepper and olive oil. Toss to coat.
- Garnish pasta with cheese, basil and hot sauce if desired.
