Cauliflower And Green Pea Curry
- 2 tablespoons clarified butter or oil
- 1/3 pound onion finely chopped
- 2 cloves garlic minced
- 2 tablespoons fresh ginger grated
- 1/3 cup curry paste
- 3/4 cup cream
- 1 1/4 pounds cauliflower florets
- 1 pound tomatoes coarsely chopped
- 1/4 pound frozen peas
- 1 1/4 cups yogurt
- 3 hard boiled eggs sliced thinly
- fresh cilantro finely chopped, to garnish
- Heat clarified butter in a large saucepan and sweat onion, garlic and ginger, stirring, until onion is soft. Add curry paste and cook, stirring, until mixture is fragrant. Add cream and bring to a boil. Reduce heat, add cauliflower and tomatoes and simmer, uncovered, for 5 mins, stirring occasionally. Add peas and yogurt and cook over low heat for about 5 mins or until peas and cauliflower are just cooked. Serve with hard-boiled eggs and garnish with cilantro.
