Cauliflower And Green Pea Curry

  1. Heat clarified butter in a large saucepan and sweat onion, garlic and ginger, stirring, until onion is soft. Add curry paste and cook, stirring, until mixture is fragrant. Add cream and bring to a boil. Reduce heat, add cauliflower and tomatoes and simmer, uncovered, for 5 mins, stirring occasionally. Add peas and yogurt and cook over low heat for about 5 mins or until peas and cauliflower are just cooked. Serve with hard-boiled eggs and garnish with cilantro.
