Apple-Strawberry Crisp
- 3 pounds gala apples sweet, peeled, cored and diced
- 1/2 cup sugar feel free to use Splenda Baker's Mix... I do and it is just as delicious.
- 1 teaspoon vanilla
- 1/4 teaspoon grated orange zest
- 1 tablespoon fresh orange juice
- 3 tablespoons all purpose flour
- 6 tablespoons unsalted butter cold, cut into pieces
- 2/3 cup all purpose flour
- 2/3 cup oats
- 3/4 cup light brown sugar packed
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon cinnamon
- 1/4 teaspoon salt
- For the topping, combine all those ingredients and beat on low until the mixture forms into course crumbs.
- Preheat the oven to 375.
- Grease/butter a 9x13" dish.
- In a large bowl, combine the apples, strawberries, sugar, flour, vanilla, orange zest, and juice.
- Transfer to the baking dish and cover with topping.
- Bake approx. 55-60 minutes, until topping is brown and juices are thick and bubble around edges.
- Let cool for about 15 minutes. Serve with vanilla bean ice cream.
