Banana Nut Bread
- 1/2 cup unsalted butter melted
- 1 cup brown sugar
- 2 eggs
- 4 bananas ripe, mashed
- 4 tablespoons buttermilk
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup chopped pecans toasted, if desired
- turbinado sugar for sprinkling, optional
- Whisk melted butter and brown sugar together in a large bowl.
- Add one egg at a time and mix until incorporated.
- Add bananas and stir, then buttermilk and vanilla and stir.
- In a separate bowl, mix together flour, baking soda, and salt.
- Add dry ingredients to wet ingredients. Stir in pecans gently.
- Pour into a greased loaf pan and sprinkle with turbinado sugar (optional).
- Bake in a preheated 325* oven for 35 to 45 minutes or until a toothpick inserted in the middle comes out clean.
- Cool for 10 minutes in the pan and then finish cooling on a wire rack.
