Baked Chicken Parmesan
- 1/2 c. salad oil
- 3 broiler-fryers, cut up (6 lb. total)
- 1 1/2 tsp. oregano, divided
- 1 1/2 tsp. salt, divided
- paprika
- 2 (4 oz.) cans sliced mushrooms
- 4 Tbsp. grated Parmesan cheese
- Line a 15 x 10 x 1-inch pan with aluminum foil.
- Pour oil into pan; place in a 425u0b0 oven to heat for 10 minutes.
- Remove pan. Place chicken, skin side down, in hot oil.
- Sprinkle lightly with 1/2 the oregano, salt and paprika.
- Return pan to oven; bake at 425u0b0 for 30 minutes.
- Turn chicken; sprinkle lightly with remaining oregano, salt and paprika.
- Bake 15 minutes longer. Remove from oven and spoon drippings over chicken.
- Pour mushrooms with liquid over chicken; sprinkle with Parmesan cheese.
- Bake for 5 minutes.
- Yields 12 servings.
