Baked Chicken Parmesan

  1. Line a 15 x 10 x 1-inch pan with aluminum foil.
  2. Pour oil into pan; place in a 425u0b0 oven to heat for 10 minutes.
  3. Remove pan. Place chicken, skin side down, in hot oil.
  4. Sprinkle lightly with 1/2 the oregano, salt and paprika.
  5. Return pan to oven; bake at 425u0b0 for 30 minutes.
  6. Turn chicken; sprinkle lightly with remaining oregano, salt and paprika.
  7. Bake 15 minutes longer. Remove from oven and spoon drippings over chicken.
  8. Pour mushrooms with liquid over chicken; sprinkle with Parmesan cheese.
  9. Bake for 5 minutes.
  10. Yields 12 servings.
