Pork And Fennel Pasta
- 2 tablespoons olive oil
- 4 pork sausages
- 13 ounces spaghetti
- 1 bulb baby fennel thinly sliced
- 3 shallots sliced
- 2 cloves garlic minced
- 1/2 cup white wine
- 2 1/2 tablespoons butter chopped
- 1 bunch broccolini chopped
- shaved Parmesan cheese to serve
- mixed greens to serve
- Heat 1 tbsp oil in a large frying pan over medium heat. Cook sausages for 8-10 mins, turning, until just cooked through. Let cool slightly. Slice thinly.
- Cook spaghetti in boiling salted water until al dente. Drain.
- Meanwhile, heat remaining oil. Saute sausage slices for 2-3 mins, until golden. Add fennel, shallots and garlic. Saute for 3-4 mins, until fennel is tender. Add wine and cook, stirring, for 1 min. Add butter and broccolini. Cook, stirring, for 1-2 mins, until broccolini is almost tender. Toss with pasta. Season.
- Serve topped with Parmesan and mixed greens on the side.
