21 Day Fix Stuffed Bell Peppers

  1. Preheat oven to 375 degrees.
  2. Spray cooking sheet and pan with cooking spray.
  3. Rinse can of black beans and set aside.
  4. Cut tops off of 4 bell peppers and clean out the seeds/ Shred sharp cheddar enough for 4 blue containers or desired amount.
  5. Salute one package of ground turkey in pan with whit and green onions (save some green onions for topping). Season turkey with a bit of cayenne, chipotle powder, onion powder, black pepper, garlic powder, oregano, salt, paprika and cumin powder. Add in more cayenne or chipotle for spiciness!
  6. Mix turkey, black beans and couscous in a large bowl.
  7. Stuff peppers with the mixture.
  8. Spread a Tbsp of salsa and green onions over the mixture. Top with half the cheese.
  9. Cook 30-35 minutes. At minute 20 add the remainder of the cheese.
  10. Enjoy!
