21 Day Fix Stuffed Bell Peppers
- 4 bell peppers
- 1 cup quinoa or whole wheat couscous
- 1 can low sodium black beans
- 1 package ground turkey
- 1 white onion
- green onions
- cayenne
- chipotle powder
- onion powder
- garlic powder
- oregano
- black pepper
- salt
- paprika
- cumin
- 1 tablespoon salsa
- Preheat oven to 375 degrees.
- Spray cooking sheet and pan with cooking spray.
- Rinse can of black beans and set aside.
- Cut tops off of 4 bell peppers and clean out the seeds/ Shred sharp cheddar enough for 4 blue containers or desired amount.
- Salute one package of ground turkey in pan with whit and green onions (save some green onions for topping). Season turkey with a bit of cayenne, chipotle powder, onion powder, black pepper, garlic powder, oregano, salt, paprika and cumin powder. Add in more cayenne or chipotle for spiciness!
- Mix turkey, black beans and couscous in a large bowl.
- Stuff peppers with the mixture.
- Spread a Tbsp of salsa and green onions over the mixture. Top with half the cheese.
- Cook 30-35 minutes. At minute 20 add the remainder of the cheese.
- Enjoy!
