Squash Casserole
- 2 to 3 c. cooked squash
- 1 egg, slightly beaten
- 1/4 c. margarine, sliced
- 1/2 c. mayonnaise
- 1 Tbsp. sugar
- 1 c. grated Cheddar cheese, divided
- 1 to 1 1/2 c. cracker crumbs, divided
- 1/2 tsp. cayenne pepper
- 1/2 tsp. oregano
- salt and pepper to taste
- 1 can cream of chicken soup
- 1 large onion (cooked with squash)
- Preheat oven to 350u0b0.
- In a medium saucepan, boil squash and onion together until tender.
- Drain well.
- In a large bowl, mix squash, egg, margarine, sugar, 1/2 cheese, 1/2 cracker crumbs, soup and seasonings. Mix well.
- Put in buttered 2-quart casserole dish. Top with remaining cheese and crumbs. Bake at 350u0b0 for 20 to 30 minutes or until thoroughly heated and bubbly.
- Serves 6 to 8.
