Healthy Mini Pizzas

  1. Combine the flour with yeast and water, mix to form a doughy consistency. Lightly cover some cling film with a drop of olive oil and wrap the dough in the film. Leave it in a warm place for at least 15 minutes. (We wrapped it in a tea towel and left it on a radiator)
  2. Fry the chorizo (no oil needed) we then left it in some kitchen roll to get rid of all the oil.
  3. Sprinkle a little flour onto a clean work base and separate the dough into 8 mini balls. Flatten onto a greaseproof paper lined tray.
  4. Add a tsp of pesto onto each base then add the chorizo and the rest of the toppings. Sprinkle on some fresh mozzarella too!
  5. Pop them into a preheated oven and leave them in until the bases are nice and crispy
  6. Serve with a rocket salad and enjoy!
