Healthy Mini Pizzas
- 1 1/8 cups spelt based flour
- 1/2 teaspoon active yeast dried
- 3/4 cup lukewarm water
- 1/2 pesto a jar of, we used red but green would be just as nice!
- 1 handful cherry tomatoes
- 1 handful pine nuts
- chorizo
- green olives Black and
- fresh mozzarella
- Combine the flour with yeast and water, mix to form a doughy consistency. Lightly cover some cling film with a drop of olive oil and wrap the dough in the film. Leave it in a warm place for at least 15 minutes. (We wrapped it in a tea towel and left it on a radiator)
- Fry the chorizo (no oil needed) we then left it in some kitchen roll to get rid of all the oil.
- Sprinkle a little flour onto a clean work base and separate the dough into 8 mini balls. Flatten onto a greaseproof paper lined tray.
- Add a tsp of pesto onto each base then add the chorizo and the rest of the toppings. Sprinkle on some fresh mozzarella too!
- Pop them into a preheated oven and leave them in until the bases are nice and crispy
- Serve with a rocket salad and enjoy!
