Cottage Cheese Muffins
- 1 cup flour
- 1 egg
- 1/2 tablespoon butter
- 1/2 tablespoon lard
- salt
- 1 cup cottage cheese Queijos Lagos, or cottage cheese
- 2 whole eggs
- 4 egg yolks
- 1 1/4 cups brown sugar
- 1 3/4 tablespoons butter
- 1 tablespoon cornstarch
- Mix the flour, egg, butter, and lard. Knead well with about 0.5 deciliters warm water, and season with a little salt.
- Beat well, and let rest while you prepare the filling.
- Preheat oven to 180 degrees Celsius.
- Use a fork to mash the cottage cheese. Stir in the eggs, egg yolks, sugar, butter, and cornstarch. Mix until creamy.
- Roll out the dough very thin.
- Cut out slices of dough, and line greased and floured cupcake pans with the dough.
- Fill with the cream cheese mixture.
- Bake for 20 to 25 minutes, or until golden.
