Warm And Spicy Creole Seasoned Chicken And Peppers Over Brown Rice
- 1 jalepeno pepper small, seeded and minced
- 12 ounces boneless skinless chicken breast cut into bite sized pieces
- 5 teaspoons creole seasoning
- 1 tablespoon olive oil
- 1 1/2 cups chicken broth
- 1 can diced tomatoes petite
- 1 inch bell pepper large, cut 1/2" pieces
- 1 inch green pepper large, cut 1/2" pieces
- 1 lime small, juiced
- 1 cup black beans rinsed and drained
- 3 cups cooked brown rice
- Heat oil in non-stick pan over medium heat. Toss chicken with 2 tsp creole seasoning and saute for 5 minutes until browned and cooked through. Set aside.
- Add 1/2 cup chicken broth to pan and add onions, peppers, and garlic. Saute for 10 minutes until tender.
- Add remaining ingredients and lower heat to medium low. Cover and cook for 20 minutes until liquid reduces.
- Serve over brown rice.
