Deconstructed Blt
- 1 pork belly skin on
- kosher salt As needed
- black pepper As needed, freshly ground
- 1 pint cherry tomatoes
- 2 cloves garlic
- honey As needed
- vinegar As needed
- olive oil As needed
- 2 loaves Wonder Bread crusts removed
- 3 cups heavy cream
- 1 bunch lovage
- 1. Score the skin of the pork belly in a diagonal pattern.
- 2. Roast at 500u0b0F (convection oven) for 45 minutes. Chill in blast chiller and then slice a quarter-inch thick.
- 3. For tomatoes, place tomatoes in very hot saute pan (no oil).
- 4. Add garlic to pan, continue to blister and cook down until the garlic is golden brown. Remove from the pan and when the tomatoes are cool enough to touch, remove their skins.
- 5. Return the peeled tomatoes and garlic to the pan. Add honey and vinegar and cook down to jam consistency. Taste and re-season if needed.
- 6. For bread puree, place slices of bread into large mixing bowl.
- 7. Add heavy cream and soak through. Puree in blender and season to taste.
