Udon Noodles With Chicken And Bok Choy
- 2/3 cup chicken breasts cut into strips
- 2 tablespoons soy sauce
- 2 tablespoons honey
- 2 teaspoons peanut oil
- 1 carrot cut into matchsticks
- 2 cloves garlic thinly sliced
- 4 pieces fresh ginger peeled, julienned
- 1 bird's eye chili pepper finely sliced, plus extra, to serve
- 1 red pepper deseeded, sliced
- 2 stalks celery sliced
- 1 bunch baby bok choy trimmed, leaves separated
- 4 ounces dried udon noodles cooked according to package directions
- cilantro leaves to serve
- In a bowl, combine chicken, soy sauce and honey. Set aside 5 mins to marinate. Drain chicken and reserve marinade. In a large wok or frying pan, heat oil on high. Add chicken and stir-fry 2-3 mins, until just cooked through. Remove from wok and set aside.
- Add carrot, garlic, ginger, chili pepper and reserved marinade to wok and stir-fry 3-4 mins. Add 1/4 cup water, red pepper, celery and bok choy stems and cook 1-2 more mins. Return chicken to wok, along with noodles and bok choy leaves. Toss until well combined and heated through. Serve with extra chili pepper and cilantro leaves.
