Oatmeal Raisin Bread
- 2 packets active dry yeast
- 1/2 c. milk
- 1 c. cold water
- 1/4 c. butter or margarine
- 1/4 c. honey
- 1 c. raisins
- 2 c. uncooked oats
- 6 to 6 1/2 c. bread flour
- 2 tsp. salt
- Dissolve yeast in 1/4 cup of warm water.
- Combine milk and cold water and heat until almost boiling.
- Pour hot liquid over butter, honey, raisins and salt in a large bowl and stir until butter melts.
- Cool to lukewarm.
- Add the yeast mixture and oats. Beat in 2 cups of the flour until mixture is smooth.
- Add remaining flour and stir to make a soft dough.
- Turn out onto a lightly floured surface and knead until elastic, about 10 minutes. Place in a greased bowl.
- Turn to coat and let stand, covered, until doubled in size.
- Punch dough down and shape to form 2 loaves.
- Place in greased loaf pans.
- Cover and let rise until nearly doubled.
- Bake at 375u0b0 for 45 minutes or until bread sounds hollow when tapped.
- Cool on racks.
- Yields 2 loaves.
