Oatmeal Raisin Bread

  1. Dissolve yeast in 1/4 cup of warm water.
  2. Combine milk and cold water and heat until almost boiling.
  3. Pour hot liquid over butter, honey, raisins and salt in a large bowl and stir until butter melts.
  4. Cool to lukewarm.
  5. Add the yeast mixture and oats. Beat in 2 cups of the flour until mixture is smooth.
  6. Add remaining flour and stir to make a soft dough.
  7. Turn out onto a lightly floured surface and knead until elastic, about 10 minutes. Place in a greased bowl.
  8. Turn to coat and let stand, covered, until doubled in size.
  9. Punch dough down and shape to form 2 loaves.
  10. Place in greased loaf pans.
  11. Cover and let rise until nearly doubled.
  12. Bake at 375u0b0 for 45 minutes or until bread sounds hollow when tapped.
  13. Cool on racks.
  14. Yields 2 loaves.
