Sponge Toffee
- 2 1/2 cups sugar
- 2/3 cup corn syrup
- 3 teaspoons vanilla
- 6 tablespoons water
- 2 tablespoons baking soda
- oil to grease pan
- milk chocolate chips for dipping
- In a large pot combine sugar, corn syrup, vanilla, and water.
- Bring to a boil then insert candy thermometer.
- Stirring occasionally, simmer until 300 degrees is reached.
- Immediately remove from heat and add the baking soda.
- Stir until well combined and then dump contents onto a greased cookie sheet
- Allow to cool for 3 hours or over night.
- To break the toffee up take a butter knife and stab downwards into the toffee mass. this will break it into small bite sized pieces with losing the least amount of candy.
- ***Optional***nver a pot of water place a glass bowl and turn element to 1 and pour in the chocolate chips. stir every now and again until melted. This should take about 15 minutes. Do not heat over high as this will over cook the chocolate and it will not look so pretty after it hardens.
