Prawn Toasts
- 24 prawns small raw, peeled, deveined, tails left intact, butterflied
- 7 slices bread crusts removed from 6 slices and quartered
- 3 1/2 ounces prawns royal red
- 2 teaspoons soy sauce
- 1 green onion chopped finely
- 1 teaspoon fresh ginger finely grated
- 2 red chilies small fresh, deseeded, finely chopped
- 2 tablespoons sesame seeds
- peanut oil for deep-frying
- plum sauce for serving, optional
- In a food processor, pulse 1 slice of bread to breadcrumbs. Add royal red prawns and soy sauce. Process until smooth. Add onion, ginger and chilies.
- Spread 1 tsp prawn paste onto each piece of quartered bread and top each with a prawn. Sprinkle with sesame seeds.
- Heat oil and deep-fry prawn toasts, in batches, until lightly browned and cooked through. Drain on paper towels. Serve immediately, with plum sauce, if desired.
