Pork Tenderloin With Apples And Gorgonzola

  1. Preheat broiler. Heat butter in a large frying pan, saute zucchini over medium heat for 5-6 mins until golden and tender. Season then remove and set aside.
  2. Add 1 tbsp oil and saute apple and onion wedges for 4-5 mins, turning occasionally, until tender and golden. Remove and set aside. Add remaining oil, season pork and sear over medium-high heat for 4-5 mins on each side until golden and cooked through. Remove from pan.
  3. Return zucchini to pan, top with pork, apples, onion and cheese. Place under broiler for 2-3 mins until cheese has melted. Garnish with fresh marjoram.
