Pork Tenderloin With Apples And Gorgonzola
- 1 1/2 tablespoons butter
- 1 1/4 pounds zucchini chopped
- 3 tablespoons vegetable oil
- 1 red apple cut into 4 wedges
- 1 red onion cut into 4 wedges
- 4 pork tenderloin medallions
- 2 1/2 ounces gorgonzola cheese sliced
- marjoram leaves fresh, to garnish
- Preheat broiler. Heat butter in a large frying pan, saute zucchini over medium heat for 5-6 mins until golden and tender. Season then remove and set aside.
- Add 1 tbsp oil and saute apple and onion wedges for 4-5 mins, turning occasionally, until tender and golden. Remove and set aside. Add remaining oil, season pork and sear over medium-high heat for 4-5 mins on each side until golden and cooked through. Remove from pan.
- Return zucchini to pan, top with pork, apples, onion and cheese. Place under broiler for 2-3 mins until cheese has melted. Garnish with fresh marjoram.
